I thought I would share something different today...my very favorite cake recipe!
The name? What else...LAZY Daisy Oatmeal Cake. This recipe has been in my family for a long...long...long time. It is my favorite and a favorite at my church. Make this your "go-to" recipe for ANY fellowship...and you will never be faced with a decision of "What do I bring" ever again. Just keep the ingredients on hand and you are all set. You can even bake the cake a day ahead and then just toss on the frosting and brown...fresh homemade!!! HINT: Do not share this recipe with anyone from your church...why? It's not due to selfishness...it's because there will be 20 Oatmeal cakes at your next social. Funny but absolutely TRUE! Go ahead...whip one up...you deserve it! Lazy Daisy Oatmeal Cake 1 ¼ c. boiling water 1 c. oatmeal 1 stick butter Place oatmeal and 1 stick of butter into the mixing bowl. Pour boiling water over the two ingredients and let sit for 20 minutes. 1 c. brown sugar 2 eggs 1 ½ c. flour 1 tsp. Baking soda ¼ tsp. Cinnamon 1 c. white sugar Add the above ingredients to the oatmeal mixture listed at top. Stir well. Pour into an ungreased cake pan and bake for approx. 35 minutes or until the cake is golden brown. Frosting 1 c. coconut 1 c. pecans ½ c. brown sugar 1 stick melted butter 1 tsp. Vanilla ¼ c. evaporated milk. I tend to make a 1 ½ batch of frosting because I love the topping! Add all the ingredients together and mix well. Spread over the top of the cake. Place under the broiler (400 degrees) and toast the coconut frosting. (brown the top). It is perfectly fine is a few of the flakes turn very dark brown. Note: Keep an eye on the cake. It only takes a few minutes to brown and can burn rather quickly if you do not keep a watch on it. I normally turn my pan around several times during the browning process to help it brown evenly. Have an absolutely wonderful day!
